Maple Mustard Chicken



Ingredients


  • 4 chicken breasts (with or without fillet)
  • 2 tablespoons butter
  • ¼ cup pure maple syrup
  • 2 tablespoons Dijon mustard or grainy Dijon mustard
  • 2 teaspoons low sodium soy sauce

Directions


  1. Preheat oven to 400° F. Arrange chicken breasts in 8-inch (20-cm) baking dish or a loaf pan.
  2. Melt butter for 15 seconds on high in microwave. Combine with mustard, soy sauce, and maple syrup.
  3. Pour mixture over chicken. Bake 30 minutes or until chicken is fully cooked. Serve hot with extra sauce drizzled over.

Tip


Serve this with rice (to absorb the extra sauce), and steamed green beans or baby asparagus for a quick, elegant supper.

Substitute similar quantities of pork tenderloin or salmon for variety.
