Bang Bang Shrimp Pasta


Ingredients

  • 1 pound (500 grams) pasta (wagon wheel works especially well)
  • 1 pound (500 grams) medium shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 6 cloves garlic, minced
  • 2 teaspoon smoked paprika, or more, to taste
  • Kosher salt and freshly ground black pepper, to taste

For the sauce

  • 1 cup sour cream
  • 1/2 cup Thai sweet chili sauce
  • 4 cloves garlic, pressed
  • Juice of 1 lime, or more, to taste
  • Pinch of crushed red pepper flakes
  • 2 teaspoon Sriracha sauce
    OR
  • 2 teaspoon Rooster sauce

Directions

  1. For the sauce, whisk together sour cream, Thai sweet chili sauce, garlic, lime juice, Sriracha and red pepper flakes; set aside.
  2. In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  3. In a large skillet or frying pan add olive oil, garlic, paprika, salt and pepper to taste, and blend well. Add the shrimp and gently mix as the shrimp cook. When the shrimp turn pink, are firm and cooked through (about 8 minutes) remove from heat and set aside.
  4. In a large bowl, combine pasta, sour cream mixture, along with the shrimp and pan juices.
  5. Serve immediately.

Tip

Substitute similar quantities of imitation crab (crab sticks) for variety. You may also substitute similar quantities of Greek yoghurt for the sour cream in the sauce.
